Smoked Trout Salad

Our whole smoked trout are so flavoursome, they absolutely sing when teemed with fruits like apple and mango.  In this salad we used fresh longans (a cute cousin to the lychee) as well as kipfler potatoes and mixed & micro greens from our beloved local Bello Food Box.

8 kipfler potatoes

about 24 longans (or 12 lychees, halved)

dill

lemon

olive oil

salt & pepper to taste

Boil the kipfler potatoes, with skin on, until soft and slice into bites sized pieces. Make a simple lemon juice, olive oil and dill dressing and season with salt and pepper. Serve as a stack of baby greens, potatoes, dressing, and crumble trout over the top. Garnish with seeded longans and micro herbs.

Serves four.
