I’m the man who sources and smokes the fish at our artisan smokehouse in New South Wales’ Bellinger Valley.  Since 2003, the Bellingen Smokehouse has been supplying restaurants and retailers, and selling directly to aficionados of smoked fish at farmers’ markets and via overnight courier.
